I actually buy it in the frozen food asile - it is something like made by dominatrix, yeah I know the name is sketchy but the eggplat patties are great and I don't have to worry about throwing out unused eggplant and it can keep for a while.

we do the same thing. Im not sure what brand we get though, but its the one from BJs. its only like $7.99 and we get So many meals out of it- And, its really good (DH makes a mean eggplant parm)
