Re: OK ladies...what to do with chicken cutlets...
the other day I just threw some stuff together & it came out really good! the best part?? it was healthy!
s&p
Couple gloves(depending on how much chicken)of garlic; minced
Fresh Lemon
EVOO
Some White wine
few teaspoons capers
Little bit of butter
Sorry so vague but i kinda just eyeballed everything! ------------------------------------ season cutlets w/s&p In a large frypan mix some evoo/whitewine/little butter & garlic...place thin sliced cutlets in the pan, cover & simmer on medium...squeeze some lemon over it, flip, squeeze some more throw in some capers...
voila! SUPER SIMPLE really yummy lemon chicken! plus the capers put a nice little twist on it... made w/rice & some steamed veggies

Cut them up in bite sized pieces. Coat with egg, then bread them in crushed bbq potato chips. Put onto a baking pan, bake for 10-15 minutes until juices run clear. Serve with bbq sauce. Tastes yummy!

I've made this recipe a bunch of times and it's absolutely delicious. Really simple and my guests have loved it! I sometimes make some cous cous to eat on the side with this:
Balsamic Chicken with Pesto Gravy & Bitter Greens
