Why do people say Happy Holiday instead of Happy Thanksgiving? It isn't a religous holiday??

I've never seen this used in place of Happy Thanksgiving. It's usually used more around Christmas / Hanukkah, I thought....

I often hear it in the plural, Happy HolidayS. I figure it covers all the bases whether it be: Thanksgiving and Christmas Thanksgiving and Hannukah Thanksgiving and Kwanzaa

Pretty much the day after Halloween is the "Holiday" season....
Plus, technically, they are right. It IS a holiday... Definition 4 denotes a religious observance, but the more general term is any holiday, especially one where work is closed.
