i'm in the crock pot groove
2 weeks in a row, i've made vegetarian chili. 2 different recipes, and i'm hydrating my beans and not using canned.
We've had like a total of 11 meals out of the first batch which probably cost me under $10 to make. dh did get tired of it after like 3 dinners lol! He makes chicken with it on the side.
But it saves a ton of money and it's nice to have something i can just microwave quick when I get home from work and it's hearty and satisfying and has protein. and we don't order out because we're too tired to cook!
I hope I can keep it up and not get bored with it.

week three=success! cooked again today. new recipe. the cilantro was amazing in it! will def continue adding cilantro

haven't invested in one yet because I'm having a hard time thinking of vegetarian recipes to use it for, besides soups and chili. Are there any vegetarians that find them versatile/useful? I would REALLY love to come home to dinner being done, lol!

I tried a lasagna in the crockpot once and it was good so veggie lasagna is definitely a good one. Curries are good on the crockpot so maybe storing like that. Maybe stuffed peppers?
