For those of you who have made this Emeril recipe
Emeril's lemon garlic chicken thighs
It sounds sooo good and i want to try and make it tonight...but i have one question. It calls for 30 cloves of garlic. Just sounds like a lot of garlic to me. Do I really need 30 cloves or should i use less? What do you think? TIA

Re: For those of you who have made this Emeril recipe
I used about 10-15 cloves of garlic, BUT I wouldn't worry too much about it, the garlic is super mellow after it goes in the oven, its not sharp like garlic can often be. Its a fantastic recipe. Make sure you use lots of onions, I used 3 big onions sliced super thin on my mandoline and it was awesome.
Next time I make this I am going to try it with Chicken Breasts, I took the skin off of the thighs and it was still fatty, but I think it would be delish with white meat also.

Re: For those of you who have made this Emeril recipe
I made this tonight and it was delicious! I used 30 cloves b/c I am a garlic lover. It was not overpowering at all. It mixes in nicely. I read that smashed garlic isn't as strong as minced garlic.
Next time I make this, I am going to add a vegetable in. I felt that was missing. Maybe carrots? I served it with rice instead of pasta and I used drumsticks as I couldn't find thighs. I made the whole recipe (12 drumsticks) and it makes a lot! Next time I'll do half or freeze half.

I made it tonight and was kind of disappointed. It was just ok. I didn't make the pasta. We made broccoli instead. It seemed like it needed more flavor.
