Whatever your favorite dish is, you can usually find a shrimp version- I had this shrimp and broccoli with walnut sauce dish yesterday, and it was delicious (and I'm not a big fan of shrimp). Also tofu dishes are good as well, or eggplant.

Sauteed string beans (with no meat) w/ white rice. Love it!!!
Or vegetable steamed dumplings
