Really yummy, healthy muffin recipe

I made these tonight, and they are by far the yummiest healthy recipe I've baked thus far... and to boot, NO sugar:

Cranberry Banana Muffins
2 cups unbleached all purpose flour
1 1/2 cups white whole wheat flour
2 tsp baking soda
1/2 cup margerine, softened
1/4 cup unsweetened applesauce
3/4 cup apple or white grape juice concentrate
2 1/2 cups mashed ripe bananas
1 cup egg whites (I didn't have enough, so I just substituted 3 whole eggs)
3/4 cup nonfat plain yogurt
3/4 cup frozen or fresh cranberries

Preheat oven to 375. In a bowl, sift together flour and baking soda.

In a large bowl, beat margerine, applesauce and juice concentrate togehter until light. Add bananas, eggs and yogurt and beat with an electrix mixer until smooth. Add cranberries and flour mixture to banana mixture and stir until thoroughly combined.

Spoon into muffin cups. Bake about 25-30mins.

Those sounds good! Would butter work? We don't usually keep margarine on hand.

You could probably use apple sauce instead of either butter or margarine.

I'd also suggest a teaspoon of flax seed for omega-3's and a teaspoon of wheatgerm. Just add a tiny bit more applesauce to balance out the consistency.

ETA: I see applesauce is already in there

3 tablespoons of ground flaxseed with 9 tablespoons of water in a blender or food processor until the mixture is thick and creamy Chat Icon
