what are your go-to meals?

Need some EASY ideas for dinners at home for Dh, myself, and DD. I feel like my go-to's are chicken cutlets, sausage & peppers, pasta, and "breakfast for dinner" lol

Tacos
Rotisserie Chicken from BJs or the supermarket with sides
Bbqing...burgers, dogs, etc

We are kind of limited because my DH eats no carbs. At all. Like zero. LOL

I won’t cook anything on a weeknight that takes more than a half hour. I buy almost everything except meat at Trader Joe’s.

Chicken quesadillas with Trader Joe’s frozen Mexican corn (shred a rotisserie chicken and mix with salsa).

Pulled buffalo chicken sandwiches- shredded rotisserie chicken, bagged Cole slaw mixed with blue cheese instead of mayo on a roll

Banging shrimp tacos- defrost frozen shrimp, dip in flour, fry and toss with mayo/sriracha on a tortilla with the bagged slaw

Crab fried rice- trader joes sells frozen flakes crab and frozen diced cauliflower. Throw it all together with a scrambled egg and frozen Asian veggies

Pizza on the BBQ- crusts from Trader Joe’s of course

Pepper jam chicken meatballs- i make in the instant pot, but you can bake them. Make a bunch of chicken meatballs, toss with Trader joe’s Pepper jam. I usually serve with roasted Brussels sprouts

Trader Joe’s also sells frozen eggplant cutlets for eggplant parm.

Crumbled sausage with sauce over zoodles or spaghetti

I get the pre-formed chicken burgers from Iavarone or Uncle Giuseppes and top with fresh mozzarella, roasted red pepper and balsamic

We cook everything on Sunday. I work evenings so my husband is home by himself with the twins and he picks them up at 6. Dinner needs to be ready or the kids will go nuts. We cook on Sunday’s.
Always in the rotation:
Home made pizza
Home made chicken nuggets (cut up breast’s toss in ziplock of flour move to next zip lock toss in eggs and final zip lock of breadcrumbs, put on cookie sheet and bake)
Broccoli (roasted)

Then we cook sundays: we will do a few different meats ether grilled or cooked in the house. In summer it’s lots of bbq meats plus veggie sides in the winter I’ll make soups, sauce, chili etc. we just don’t have time to cook weekdays
I also always have on hand tons of fruit I cut and put into serving cups for us all, babybell cheeses, yogurts, boiled eggs, nuts and homemade pancakes (I have a great and quick scratch recipe if you want!) I also make chicken meatballs or regular meatballs once a month for easy lunches

If only I were that close! Lol I actually picked up the ingredients today to make them tonight hopefully they come out good!!

Aside from some you mentioned...

Chicken Quesadillas
Tacos
Hamburgers/Hot dogs
Chicken Parm
Stir Fry Chicken or Chicken teriyaki
Chicken Alfredo
Steak & eggs
Spaghetti Bolognese

For sides we usually do steamed frozen veggies and rice, mashed potatoes (sometimes instant, sometimes real), roasted potatoes, or pasta.

I spend too much time on Pinterest so I try new recipes a lot but some repeats would be

Roasted chicken or now that it's hot beer can chicken on the grill (not fat but minimal work). Leftovers get shredded and used for soup, rice bowls, and most often chili bc it freezes well.

Hamburgers - beef, chicken with buffalo sauce, or black bean

Hot dogs - pretty much the only meal the entire family will eat

Salads - I do bacon and hard boiled egg, chicken with pecans and apple, taco meat, etc. My current favorite is roasted chickpeas with pepperoncini peppers, cucumber, tomato, and feta.

Veggie fried rice or stir fry with chicken or shrimp over brown rice

Eggplant parm

Italian sausage on the grill. I usually do a foil packet with potatoes and broccoli for a quick side.

Chicken tikka masala in the crock pot with chickpeas and peas over rice

Pasta with sauce

Tacos - either beef, ground chicken, or shredded chicken in the crockpot. Lately I've been using Alton Brown's recipe for homemade seasoning. Leftovers go over rice or salads.

Marinated shrimp skewers on the grill are so quick. Grill some veggies on the side and microwave a bag of brown rice.

Pulled pork in the crockpot. Leftovers get frozen for easy future meals.

Rice and beans - lately I've been using the skinnytaste Cuban black beans and rice recipe. Top with a little fresh guacamole

Dinner during the week needs to be quick. Side are typically frozen veggies or frozen rice and bagged salads

We are in BBQ season so we try to rotate what we grill burgers, sausage, pork chops, salmon, veggies, steak, chicken ect..

Other regulars are:

Korean Beef Bowl

Mini meatloaf in a skillet (ground turkey, breadcrumbs, seasoning, egg, onion ect) and a jar of brown gravy

Toss cut up chicken, steak and veggies with hoisin sauce and cook as a stir fry inside or on grill in a basket

Quesadillas

Over the weekend we sometimes make baked ziti, lasagna, baked mac and cheese to make the week easier

i'm vegetarian and a horrible cook so i need easy!

quinoa or couscous with sundried tomatoes and artichoke hearts and hot sauce of any kind is my usually quick meal.

butternut squash soup since the kids really like it and its an easy way to get them to eat veggies.

Cauliflower rice- I make this weekly and use skinnytaste recipes (her cauliflower fried rice and the cauliflower rice with lemon and garlic are both very good)

we have been grilling alot too, chicken sausage, chicken, steak, fish and then i will do easy sides like sweet potatoes on the grill, or corn, peas, a big salad.

my kids like the skinnytaste cauliflower rice balls with chicken sausage so I will make that with pasta on the side.

easy things like mac and cheese and peas for the kids or tuna melts for dh and I when we are pressed for time.

i look to skinnytaste and make many many of her recipes. I usually try to bake something once a week, muffins, cookies, etc to satisfy our sweet tooth and will always use one of skinnytastes recipes. We love the black bean brownies, or the blueberry banana bread.

all my go-to meals have been listed except one:

stewed beans with poached eggs. pinterest has one recipe listed as "tuscan farmers breakfast."

doesn't require much tending to. so i can run around the house doing other things while it's cooking.

I don’t do a lot of repeats, tbh. I like something different almost everyday, but I’m a pain like that.

The repeats I do are as follows:

Garlic soup http://www.czechcookbook.com/garlic-soup-cesnekova-polevka/ The you tube link there has how to make it.

Anything grilled. Throw some chicken thighs (or whatever part you like) on the grill with some BBQ sauce and grilled veggies. I bought a grilled veggie basket for the grill from Weber and it works well.

Sausage and peppers

Eggplant meatballs http://memoriediangelina.com/2011/08/07/polpette-di-melanzane-eggplant-meatballs/ I like that with a nice salad.

The crock pot is also nice. I like to do oxtail, wild boar (I know this might not appeal to you), short ribs or chicken thighs as a stew.

I batch cook on weekends and meal plan/prep. I always do 1 pasta, 1-2 chicken, 1 leftover, 1 "whatever looks good at the market" and 1 take out or breakfast for dinner.

Always in rotation is:

Enchiladas
Meatballs/meat sauce
4 cheese tortellini
Pulled pork/pork roast
Turkey/chicken burgers
Chicken francaise (so easy to do homemade and requires very little babysitting)
Soups
