WW CHICKEN WITH FETA SAUCE!
Here is the recipe...it is sooooo good! It is from the New Complete WW Cookbook!
Makes 4 servings
Four 4 oz skinless boneless chicken breasts
2 tablespoons balsamin vinegar
1/2 teaspoon ground thyme
2 teaspoons olive oil
1 tablespoon and 1 1/2 tablespoon of all purpose flour (this is the way WW writes it I have no idea why)
1/2 teaspoon ground oregano
1 cup fat free milk
1 cup thawed frozen broccoli, carrot and cauliflower medley (I substituted other veggies)
1/3 crumbled feta cheese
1 teaspoon lemon juice
2 cups hot cooked white rice or orzo

1. On a sheet of wax paper, spinkle the chicken with the vinegar and thyme. In a large non stick skillet, heat the oil/ Cook the chicken, 4-5 min on each side. Transfer to plate.
2. Sprinkle the flour and oregano over the pan juices; (I was left with little jiuce I had to add more oil). COOK and stir constantly, 1 minute. Gradually whisk in milk; cook whisking constantly until thick and bubbling, 2-3 minutes. Stir in the veggies, cheese and lemon juice. Reduce the heat and simmer until the cheese melts, about 2 minutes. Place the rice on a large platter; top with the chicken.
Spoon the sauce over the chicken
Per serving...319 calories, 6g Fat, 2 G sat fat, 60 mg Cholesterol, 219 mg sodium, 37g total carbs, 1g dietary fiber, 27 g protein, 169mg calcium
