Using an old phone for WIFI only
So I just upgraded from a samsung S4 to an S 7. DD has been begging me for my old phone. At first I said no but now that I am wondering if there is a way to let her use it so I dont have to pay a monthly fee and she can basically use it take pics, text me using a free messaging app and use WiFI to play games etc.
I know step one is to turn on Airport Mode but anyone care to walk me through the rest?

I agree with taking the SIM card out, there is no need for it. As long as she has wifi she can text - there are plenty of free messaging apps. Try hangouts for one, you can give her an email address to use and that account will work for messaging you. Our kids have been using our old phones instead of iPods forever. We don't put them in airplane mode because then wifi won't work, we just turn off bluetooth to preserve battery life.
I would wipe your phone clean (factory reset) and start from scratch, adding apps that she will use. Our kids have android phones as well and anything we don't want them touching, like YouTube (which I don't think can be removed), we leave in the app drawer and have the apps we do want them to have, like YouTube Kids, on the screen.

It wont work on wifi if you put it onto airplane mode. Since your phone number is no longer active on that phone, the sim card sould have been deactivated as well so you really dont have to worry about that either.
You could factory reset it, or just delete what you dont want her seeing/playing with. There are free texting apps she can use with wifi. But the most important thing is to go into your settings on google play and require a password for purchases so no accidental purchases get charged to your card for apps.

Airplane mode takes it off of the provider's cell network. When it is in airplane mode you can turn the wifi on.
