Summer Trips spin-off...(when to book)

We're planning a trip to Hershey right before Labor Day weekend.
How far in advance do you think I need to book the hotel?

Any good hotel recommendations? Something close to hershey so we don't have to drive too far. Not Hershey hotel or lodge.
