Crunchy Honey Chicken
I came across this fabulous recipe on Tasty Kitchen: Crunchy Honey Chicken. It's very easy to make and very quick. I served it over rice.
Ingredients: 2 whole Egg Whites ? cups Cornstarch Or Flour 3 Tablespoons Olive Oil 1 cup Broccoli Florets ½ whole Red Pepper, Thinly Sliced ¾ cups Sugar Snap Peas 1 Tablespoon Soy Sauce 1 clove Garlic, Minced 1 pound Thin Sliced, Boneless, Skinless Chicken Breasts ¼ cups Honey Salt And Pepper
Directions:
Prepare and slice all veggies. Feel free to add whatever you would like. In 2 separate bowls, add the egg whites (lightly beaten) and the cornstarch or flour. (The cornstarch will yield a “crispier” chicken.) Heat a large skillet over medium-high heat and add 1 tablespoon olive oil. Add veggies with a sprinkle of salt and pepper and saute for about 5 minutes, until softened. Add in soy sauce and garlic and stir so veggies are coated, about 60 seconds. Remove from skillet and set aside in a bowl. Cut chicken into 1-inch pieces and season with salt and pepper. Heat the same skillet (or you can use a different one, I just use the same to make it easier) over medium-high heat and add remaining olive oil. Dip chicken pieces in egg whites and then lightly dredge in cornstarch. Add to the skillet and let brown for 2-3 minutes, then flip. Continue with remaining chicken pieces, and do so in batches if needed. Once chicken is cooked, add veggies back in the skillet. Add honey and thoroughly mix to combine. Taste and season with salt, pepper, additional honey or soy sauce. Serve with rice. Season with salt and pepper if needed.

I put it in the recipe builder (without the rice). It came out to 6 pts for 1/6 of the recipe. I had 1/4 of the recipe so it came out to 10 points.
I also had 1/2 cup of brown rice for 4 points with it.

Sorry don't know why it came up a ? I actually didn't even measure most of the ingredients (including the flour). just did it by sight and taste!

Thanks! I haven't used the recipe builder yet but it seems to be a great tool that I'm neglecting!

And since 42/6=7, I'm wondering how you got 6 pts? What did I do wrong?? This is such a cool feature and I want to make sure I'm using it right!!
ETA: I just tried it again with the chicken breast as RAW (as opposed to cooked) and it comes out to 38 pts. I guess that's where the difference is?!

I didn't put in the veggies. When you put veggies into the recipe builder they add to the PPV.

I made this last night. Problem was the chicken was not crunchy. What did I do wrong? I followed the recipe.
It was definitely delish though!!!

I made this last night just like the OP did - didn't measure, just tasted and I did use the cornstarch to coat the chicken - I can't believe how crispy is came out! This will def be one of my new favs!!!

I made this last week too and loved it! I used 1/2 cornstarch and 1/2 flour to coat the chicken and it was perfect!!
DH said to add it to the rotation
