Looking for some ideas on what to make for 40+ people...
that isn't lasagna or a la vodka. Needs to be super easy since I'm on vacation but I'm thinking maybe marsala or something. Any suggestions?

make your own tacos. just make a huge thing of the taco meat and cut up all the ingredients
pasta with meat sauce
chicken parm
chicken with rice (arroz con pollo)
baked ziti

Taco bar
Manicotti, filling and go a long way. Costco sells Michael Angelo brand and they are delish. My grandpa, almost passed out when he found out my gram didnt make them homemade.

can you BBQ... what about marinating a bunch on london broils or flank steaks and grilling them up? you can grill veggies before hand (they are jsut as good at room temp) and baked potatoes?
Tacos are super easy and always a crowd pleaser!

and I love the taco idea....

Thanks everyone! Taco night is a great idea as well as BBQing but those are already accounted for. I found an easy chicken recipe I think I'm going to make.
