how do u cook eggplant re:skin?
I'm attempting a greek veg moussaka tomorrow and have never made eggplant before in my life. Recipe says sliced eggplant. Do you keep skin on or what? I'm a little nervous with this, I'm a terrible cook.

Before my husband, I never peeled eggplant. However DH has some sort of "allergy" and now I do. I prefer skin on, he prefers skin off. I know, not much help While I have never personally made moussaka, my mom has and she doesnt peel either.

I left the skin on, too lazy to peel. It was enogh cutting them all up
It smelled good while cooking, i'll post an update and pic after dinner. Thanks all!

Sure!
Here's the recipe, it calls for A LOT of veggies so I cut it down. Not sure who they're cooking for in this Greek cookbook! Also I did NOT make the sauce, I used 2 jars of Ragu.
Vegetarian Moussaka
Serves 12
8 large eggplants, sliced (I used 4) 10 zucchini, sliced (I used 5) 10 bell peppers (red, orange, yellow and green), cut into rings (I used 4 green) 6 tablespoons olive oil 3 onions, finely chopped salt and pepper fructose powder 8 to 10 tomatoes, peeled and coarsely chopped 3 tablespoons freshly grated Parmesean cheese 15 slices Edam or other mild cheese (I used Gouda)
1. Preheat oven to 425 2. Put the eggplants, zucchini,, and peppers in a roasting pan, drizzle with 3 tablespoons of the oil and roast until tender, about 40 minutes.
3. Meanwhile, heat the remaining 3 tablespoons of oil in a saucepan, add the onions and salt, pepper, and fructose to taste and cook over medium heat until the onions begin to soften, about 5 minutes. add the tomatoes and a few tablespoons water and simmer until you have a thick sauche, about 15 minutes (As I said I skipped this step and just used Ragu!)
4. Place a layer of roasted eggplants in a lightly oiled, large baking dish. season with salt and pepper and add some tomato sauce and Parmesean. Add a layer of zucchini, then peppers, and sauce. Continue layering until the dish is full. Lay the Edam slices on top.
5. Bake the Moussaka for 15 minutes. Serve hot.
