Shrimp tips!

I bought frozen de-veined unpeeled shrimp yesterday. Made fettucine with cream sauce, peas and shrimp.

Here's what we did:
Semi-defrosted them in a pot of water (the flame was on for about 5 minutes, the water never boiled).
Dropped them into cold water and DH started to peel them.
Sauteed them with butter and garlic.


DH didn't love them. They weren't overcooked (not rubbery) but he just wasn't raving.

He thinks maybe he just doesn't like shrimp except for cold in cocktail sauce.

I have another batch frozen ready to go and would love to knock his socks off using them.

Got any tips for cooking them or a great recipe?

Pad Thai but you just had pasta but

I made my own sauce but it was more like a peanut sauce watered down w/ fish sauce, garlic, soy sauce, rice wine vinegar - just made it to taste.

Stir fried w/ snow peas any veggies you like. Topped w/ bean sprouts, cilantro and scallions. Squeezed a piece of lime
Soo good.

You can make it really spicy if he likes

I love making this recipe:

Linguine with Shrimp Scampi

The changes I made were to use less Kosher salt (never used table salt for her recipes), 1 lemon instead of 2, and cut down on the butter.

Also, whenever I buy frozen shrimp, I defrost it in a colander under running cold water.

Me too.

These are simple recipes:

Saute a few cloves of garlic and a bag of fresh spinach in a little olive oil, add a big can of no-salt added diced tomatoes, the shrimp, and a little oregano. Let simmer a bit and add some feta cheese (about 1/2 cup?). Serve over couscous.

or

Toss the shrimp with some garlic, cumin seeds, onion powder, chili powder, a little chipotle tabasco, about a half cup of fresh chopped cilantro, and the juice of a lime. Serve with tortillas and your favorite taco toppings - lettuce, tomato, salsa, sour cream, etc.

Did you buy the shrimp cooked or uncooked?
If they are already cooked then that could be the problem.
Also defrost them under cold water like a previous poster stated.

Buy raw shrimp & defrost in Microwave. They should still be raw when done. Then sautee them like you did until they are pink and make a C

C-cooked
O-overcooked

Overcooked shrimp IMO are so disgusting.

FTR, they were frozen, UNcooked and UNpeeled.

What kind do you guys buy? I really don't want to devein them!

If I have time, I usually leave it the fridge overnight. If needed, I will run it under cold water. It's best to run it under cold water in a plastic bag or the shrimp can get watery.

I never use warm water. My friend swears by defrosting shrimp in milk. I have never used this method but know it works for most seafood.



As for recipes..I like this one

Do NOT defrost in the microwave. Defrost them under cold water.

I buy them already peeled and deveined fresh at the fish store.
I serve over pasta and cook them in a slow boil for 3- 4 minutes, I was just told to put some celery salt in the water , it is suppoed to make the shrimp sweeter. I serve over pasta w/ vodka sauce cooked separately.
Another recipe-
I also open up a jar of pineapple mango/ peach salsa and a liitle bit of low sodium chicken broth heat , add raw shrimp until pink. Serve over brown rice- tastes like general Tso's but not fried. HTH
