Cooking challenged...who wants to help me
So, I'm cooking challenged in that I am very picky and so are DD's. Basically...we don't eat veggies. I KNOW WE SHOULD, BUT WE DON'T
Anyway...I am now a single mom who works FT. I need some things I can make on the weekend and either freeze to heat up during the week, or some simple receipes I can whip together when I get home.
The problem is...every receipe always has so many veggies in it. I don't have a food processor, so I can't hide them (from myself ). I sometimes will make something that calls for onions, or mushrooms, or carrots, etc, because they are used to cook to make the flavor...but then I pick them out before eating whatever it is
So...if anyone can help me with some receipes...please do! Thanks

Hmm...
I'd make casseroles like baked ziti, baked ravioli, baked mac and cheese, taco pie...Its really hard to come up with recipes without veggies...maybe chili, black bean soup, potato soup too.

Jerry Seinfelds wife wrote a cookbook called Deceptivly Healthy (?) - basically, she adds vege/fruit purees to batters, sauces. You could probably use baby food.
Its not the most healthy, but I make a very quick, 5 ingredient dish that is very tasty. Sausage, pasta, petite diced tomatoes, chicken stock and spinach
I get bulk sausage (not in links- like chop meat) and brown it (maybe w/ a litte EVOO if the pan is too hot.
I boil water for pasta - usually whole wheat penne
When the sausage is almost brown, I add about 2/3 a can of petite diced tomatoes and a little chicken stock to make a sauce
When the pasta is done, I add it (drained) and a bag of fresh spinach until wilted.
Now, 2/5's of the ingredients are veges but they are small and very tasty in the recipe. -----------------------------------------------------------------
Are there any veges that you do eat? Can you make a stir fry with lots of garlic and maybe some peppers?
As a newly single mother - working FT - i have decided to cook on my off weekends from DS (S2BX has him every other weekend). -----------------------------------------------------------------------
I have recently tried sweet potatoes again. I bake them like a regular white potatoe. Since I'm still a kid inside - I sprinkle some brown sugar or maple syrup on them My DS also likes sweet potatoe fries - I put a little salt and brown sugar on them -------------------------------------------------
Can you try getting a juicer and make like carrot apple juice- once you add any green veges it changes the color which might turn you off but still tastes like the fruit.
