what type of lunchmeat.....
goes well with slices of tomato and fresh mozzerella?? ILs are coming to visit this weekend, so i'm thinking of lunch ideas... i was thinking proscuitto, but doesn't that get kind of expensive? any ideas?? Thanks! ETA: this would be on a sandwich...

Anything! Well that’s just me and I love tomato and fresh mozz. Realistically I think you could do turkey for a milder flavor, salami or anything else Italian would be delicious also. Definitely throw some fresh basil on there too if you have it! Yum.

Nix the tomato and substitue roasted red peppers. Balsmic Vinegar and some fresh basil. That's a sandwich right there!

I agree with this.
but for a cheaper option than proscuitto, I would do salami.
the mild flavor of the cheese NEEDS something not as mild, and regular ham and turkey don't give it that extra zing.
another option you have is to pick up any good dry cured sausage and slice it very thin. if you have a good supermarket, they should have a few different types by the cheese/olive section. there is sopressata, milanese, calabrese and a bunch of others. some come in hot and mild varieties and are usually less than $5 for a link.
if you have a steady hand or a mandolin, you can get some really nice thin slices to complement the cheese, vinegar, and basil.

sopressata! love that.
we usually use a thin slice of proscuitto - and if we don't have good basil growing, we use a basil pesto.

you can also spread fig jam on a baguette and top with a thick slice of mozzarella and a very thin slice of proscuitto (just 1-2 per person)... then stick in your panini press.
on the side, you can serve bowtie pasta with finely chopped tomato and fresh mozz, mixed with basil pesto, salt, & pepper. mmm
