roasted chicken crispy potatoes (i slice them 1/4 inch with a mandoline, tossed with extra virgin olive oil, salt, pepper, italian seasoning, chopped fresh garlic, and red pepper flakes... baked until crispy on one side... tender on the other!) sliced cucumbers with olive oil, lemon juice, s&p

spinach stuffed chicken breasts over smashed scallion and sour cream baby red potatoes. Corn on the cob. Tri Colori Salad with fresh raspberries roasted almonds and goat cheese.

We had taco salads. Yep. Ground turkey with mexican seasoning, served warm over bagged lettuce, partially frozen cheddar cheese, salsa, and crumbled Ritz crackers since I didn't realize our tortilla chips had gone stale

Oh YUM!
Craving this so badly now.
I made tortellini with red sauce, salad and garlic bread. Boring.

I have no urge to cook on Mondays, so I tend to make something SUPER fast & easy.
We had pork fried dumplings that I steamed with scallions & an asian dipping sauce I bought at Traders Joe - sooo good.
I cheated and picked up a pint of pork fried rice for DH & steamed brown rice for myself on the way home from the gym.
