 | Yummy Modified Chicken Cobb Salad for two I just made this but modified the recipe b/c i dont like hard boiled eggs. I also suggest turkey bacon to reduce fat content. I just amde this tonight and it was awesome and perfect for a summer evening!
 Chicken
 -----------
 2 boneless, skinless chicken breasts
 EVOO
 1 teaspoon poultry seasoning
 Salt and freshly ground black pepper
 
 Salad
 --------
 4 slices turkey bacon
 1-2 hearts romaine lettuce
 2 tablespoons EVOO
 1 lemon, juiced
 salt and pepper
 1 ripe avocado diced
 2 plum tomatoes diced
 1/2 red onion, chopped
 1 cup crumbled blue cheese

 Heat the grill to high. Coat chicken breasts with olive oil, poultry seasoning, salt and pepper.  Then Grill 6 to 7 minutes on each side. Remove from heat and let rest 5 minutes.
 
 Cut raw turkey bacon into bite sized bits with kitchen shears. Heat over a medium skillet with a touch of olive oil for about 5 minutes. Then turn heat off and let the bacon cool in the pan.
 
 Chop 1-2 hearts of romaine lettuce and  place half of the lettuce on one plate, half on the other pate. Squeeze 1/2 a lemon onto each plate of lettuce then drizzle 1 tablespoon of oil on each plate. Season greens with salt and pepper, to taste.
 
 Chop the chicken breasts up once cooled.
 
 To serve, arrange rows of chopped chicken, crisp bacon bits, diced avocado, diced tomato, chopped red onion and blue cheese on top of each bed of lettuce.
