chicken fajitas.... tons of peppers, onions, and marinated chicken breast on a tortilla. I also like to add some fried beans, cheese, and homemade guacomole.
of course it's a 'carb balance' tortilla (becuase of my GD )

I made a pot of sauce and home made meatballs today. We just had spaghetti and meatballs....DH has Frisbee tonight so I usuallly make past for him.........
So far it is sitting welll.....I've been having reflux issues with tomato based stuff lately....we'll see how the rest of the night goes

oh, I am the fiber queen.... every meal we eat is like that. 50%+ veg/fiber. that's why I was so stunned that I got constipated in my 2nd trimester... wow those hormones are strong!

you're going to when you hear this, but DH and I eat about 10 green peppers and about 4 lbs of onions EVERY WEEK.
(along with tons of other veg ) I DO have a cast iron stomach... especially since those peppers are often coated in cayenne and are also often floating in a curry sauce or something else highly seasoned....
oh, and frankly, my diet hardly changed before and after the GD diagnosis. the only thing that changed is that the bread or tortilla is now whole wheat... other than that, our diet was always rather close to a proper diet... high in fruit and veg, decent amount of meat and dairy, and not too high in carb.

if i eat anything that TOUCHES an onion or pepper I am suffering all night. You are just like my dh! Lucky you! You get to eat while I have to eat like a 80 year old
