Beef Enchiladas and spanish rice

I thought I was gonna have a salad... but now, I can't imagine myself eating it. 
This is my problem every night--- nothing is appealing for dinner, so I basically skip it.

Spinach, mozarella cheese, onion, and rice casserole.
I was craving all these ingredients the other day so I turned it into a casserole. I liked it so much that I made it again. I also put some locatelli cheese in it and sprinkle some on it before I eat it. Yummy!!
