what to pair with ceviche??
We are having people over for drinks and ceviche, what else can we make as a main dish??

Corn on the cob with lime, chili and red pepper. Yucca Roasted pork loin
OR
Tequila Lime Chicken with pico de gallo Yellow rice (with or without black beans) Pico de gallo

I'm sorry! Did you already make this?
I do a bastardized version of Pioneer Woman's Tequila Lime chicken. Lime juice, a minced jalepeno, some olive oil and some minced garlic with Salt in a plastic Ziploc. Add the chicken and let it marinate for a few hours. I actually have been leaving out the Tequila because we don't usually have it around. Grill the chicken add shredded monterey jack in the last few minutes so it melts on and then serve. Spoon homemade pico on it - it's delicious!
Homemade pico is just diced tomato, chopped onion, a minced jalapeno (seeds and ribs removed if you want less heat), some kosher salt and some lime juice. It's awesome. And also from Pioneer Woman!
