What to make with Roasted Veggies
So Dh has his dept xmas dinner tonite so i must fend for myself. I've decided to roast veggies before they end up going bad..
Any idea what else to make with it?

I like a nice piece of flounder or salmon...you could also grill or fry some chicken cutlets

i know i'm too late. but i would've made pasta and mixed the veggies in with it, drizzeld with olive oil and parmesan cheese.

Thanks guys for the ideas......
i was thinking of pasta too but by the time i ended up cutting up all the veggies it ended up being a lot so I just the veggies for dinner.
It was really good, EVOO, a little balsamic vinegar, rosemary and thyme.
