What to do with Spinach?

MIL gave us three bags of spinach. Besides sauteing it in oil & garlic, what can I do with it? Please share your recipes/ideas!

creamed spinach..

baked spinach pasta
use it in an omelet
lasagna
quiche
salad
spinach artichoke dip
use the spinach and some ricotta and stuff it in flank steak

Chicken burgers with spinach and feta cheese. I had a bag of spinach I didn't want to go to waste so I made these and then froze them. They were very good.

brown sausage (i crumble like chop meat but you could do thin slices.
add 1 can petite diced tomatoes
cook some pasta (i like whole wheat penne)
when that's warmed, add some pasta water.
add the spinach
drain pasta add on top to wilt spinach.
serve w/ grated cheese

I saute it but then add ricotta cheese and sundried tomatoes and stuff it inside chicken. Yummm

I make a spinach salad with fresh spinach. I usually add bleu cheese, craisins, grilled chicken and candied walnuts and sometimes sliced strawberries.

I sauteed some last night added some garlic powder, salt and pepper and then some crumbled feta after I took it from the pan.
Frittata - Saute it and then add egg and cheese and bake in the oven.

I like to sautee shallots then add the spinach and wilt. I top this with a fried egg with muenster cheese and eat it for breakfast. Love it.

Mmm, i like to saute spinach in oil, and fresh chunks and slices of garlic & onions. Browntp the rest 1st, and add the spinach at the end until they wilt.

Sometimes i'll add almond shavings too.

Smoothies!!! I throw a handful in with coconut milk, frozen strawberries (or any other berry) and a frozen banana. Delish!!!

I could eat spinach everyday.


my fall back is sauteing carrots and onions. I will occasionally throw in whatever left over meat we have and then toss the spinach in.


I also love spinach and broccoli stuffed bread. I just roll out pizza dough, spread a little pesto, put a layer of provolone and layer of spinach and broccoli. I will also add a bit of mozzarella.

Saute it w/ some oil, mix in some feta cheese, pound a few chicken breasts nice and flat, spread the mixture over the chicken breasts, then roll the whole thing. You could even coat it in breadcrumbs and then bake it in the oven. Yum!
