what side dishes....
do u usually make with dinner? i feel like i'm always making the same things over and over again. i end up making brown rice, some kind of potato or veggies. is there anything else i can add to the mix?

it depends what we are having. but I always keep frozen peas and boxes of mashed poatos, and noodles handy. I also saute spinach a lot. DH is picky so I am limited. But I like to try different things as sides. But the above I mentioned work well when i get home from work and am starving. lol.

It depends how healthy you want to be.
We mix it up with:
white rice spanish rice acorn squash butternut squash spaghetti squash sweet potatoes red potatoes other potatoes (mashed, baked, cut and made into chips, etc) salads (different kinds) candied carrots broccoli with garlic string beans with garlic and lemon and evoo garlic bread corn bread pasta of all kinds

I try to make each meal with a protein (main part), starch and a veggie. here are some of the things i choose from.
starch: brown rice rice pilaf flavored rice rice i make up mac n cheese (box or homemade) baked potato twice baked potatoes piergoes home fries mashed potatoes mashed sweet potatoes mashed potato bake egg noodles pesto pasta pasta with creamy spinach basil sauce risotto
veggie: sauteed spinach broccoli (roasted, sauteed, grilled w/ EVOO garlic and or onion, and pepper, sometimes added to it will be cheese, bread crumbs) asparagus - same options as broccoli broccoli rabe frozen mix on quick nights

I try to eat healthy so I usually just have brown rice, sweet potato or veggies. Sometimes soup or salad. For DH i'll make him mac and cheese, pasta salad, one of those suddenly side dishes.
I try to make things that dont require a side like baked ziti, skillet dishes, casseroles, stuffed peppers, etc.

baked potato roasted potatoes sauteed baby green beens a variety of rices or cous cous salads: variety of green salads, cucumber/tomato salad, corn salad, macaroni salad, fennel/olive salad squash roasted brussel sprouts w/ bacon

I TRY to be seasonal with my veg In the winter it's a lot of brussel sprouts, broccoli and cauliflower. I'll start to use more asparagus as we go into spring and then I'll shop the Farmer's Market during the late spring/summer for whatever they have.
As to my starches - I'm fairly boring. Potatoes (mashed, baked, gratin, 2x baked, roasted, fried), Rice (pilaf, plain, risotto, baked), Noodles (brown butter, buttered), corn. I do make cornmeal (muffins, polenta, hushpuppies, etc) quinoa or couscous (herbed, spiced,tabouleh) sometimes - but I'm more often using the first rotation.
I also like salads - beet salad, cucumber salad, ginger carrot salad, green salad, house salad, greek salad, Asian style salad, bean salad, tomato mint salad.

now that im trying to be healthier..
roasted butternut squash pieces- YUM! string beans broccoli- roasted or steamed cauliflower- roasted or steamed frozen peas corn asparagus- roasted with evoo and garlic is a big hit in my house
salad with tons of veggies
vegetable soup mushroom soup lentil soup
