 Start date at new job 
I resigned from my old job before I found a new one and when I was interviewing I told the company that I was available "immediately".
  Now that I think about it, I would like to have 2 weeks off before starting the new job to wrap up some projects at home...  I would like to start around August 30th.  Does anyone know how I could word this in my letter of acceptance without sounding like I am a slacker and want to postpone working?  LOL!

I wouldn't put it in a letter. I would call them and see how flexible the start date is.

  2 weeks, imho, is considered immediately to me..
  just say that you intend to start on august 28th or whenever.. you dont have to tell them why- and you will definitely not be called a slacker!

You could call them and say you are available after a certain date.  Make is sound like you are working with them on a start date.

Well, the HR guy is not in his office so I have to do it via email.  I wrote this in the email (but haven't sent it yet...)
  -------- Regarding my start date, I was wondering if it would be possible to begin my employment at "Company X" on Wednesday, August 30th, immediately following my planned trip.  Please let me know at your earliest convenience if this date meets your expectations. --------
  ((They know I had a planned  vacation from Friday Aug 25 - Monday Aug 28 and were okay with me taking those days off...  But I would like to start after the trip))!

Hmm, the only thing I do not like is that is seems as though you are asking permission.  I am not sure entirely how to word it, but I would state it more matter-of-fact.  Did they reference a start date in their last correspondence to you?

Did you verbally agree to a start date?  If so, I wouldn't even ask.  I think it starts you out on a bad foot.

  Well, I said I was available for an immediate start.  When they made the "verbal offer" the HR manager stated that they would like me to start the following week!  I said that I would review their official offer letter and get back to them regarding the official start date.
