 Dip ideas for a BBQ 
FMIL put me in charge of appetizers for today's BBQ. In addition to bruschetta and a few other things, I'm making that 7-layer taco dip (no meat, so it's not exactly heart attack dip), and I'm probably just going to do the usual onion and veggie soup mixes, but that's SO boring.
  Anyone have anything fun?

My mother gave me an avocado dip that is really good.  Not sure if it is what you are looking for, but I figured I would post it anyway.
  Small recipe (if you want you can double)
  Bottom - 	1 can refried beans
  Middle - 	3 very ripe mashed avocados and a little lemon juice
  Top - 	Blend together 	½ cup mayonnaise 	1 cup sour cream 	1 envelope Seasoned Taco Mix 	2 scallions 	 	Top with: 	2 or 3 diced tomatoes 	Black olives – sliced 	Shredded cheddar cheese

sweet potato "chips" or fries, with a special dip made out of....(ok, it's going to sound weird, but its soooooooo good)....mayonnaise, and maple syrup!!! mmmmmmmmmmmm

My aunt made an artichoke dip once that was sooo good. I don't know the recipe but maybe if you search online you can find it.  It was made with cream cheese and canned artichoke hearts, and she had pita bread to dip in it.
  I think I found it online (or at least something similar)
  Ingredients
  8 oz Cream Cheese 12 oz Shredded Mozzarella 1 Cup Mayonnaise 1 Cup Grated Parmesan 1 Onion, finely chopped 2 Cloves Garlic, finely chopped 2 jars Marinated Artichoke Hearts 1 package Pita Bread
  Drain artichokes well and tear them apart with your fingers. Cut up pita bread into chip size triangles, separate and bake on a cookie sheet until crispy(approx. 5 minutes). Combine all other ingredients and mash. Bake in an uncovered casserole dish for approx. 30 minutes @ 350 degrees Serve hot out of the over and scoop up dip with pita bread.

  I have made this and it is awesome!
 
 
 
  
 
 
 
  Chili Dip
 
  1 can of chili 1 package of cream cheese 1 bag of shredded cheddar or taco/mexican blend cheese sliced jalapenos (optional)
 
  Spread cream cheese at the base of a casserole dish
  pour the can of chili on top of the cream cheese
  spread the shredded cheese across the top
  garnish the top with sliced jalapenos
  bake in the oven until cheese melts - about 10 minutes.
  Serve with tortilla chips (tostito scoops are great for this dip)
  You can vary this by layering the chili and the cheese twice and/or by adding a layer of salsa.

I alsways make this for BBQ's. it's ready in like 10 minutes and really good!  I usually leave out the basil.
  Spinach Dip         Prep time: 10 mins  Ingredients •  1 box 10 oz. Birds Eye frozen Chopped Spinach    •  3 tbsps grated parmesan cheese    •  3 tbsps ranch dressing, low fat or regular    •  1/2 cup light sour cream or plain yogurt    •  1/2 tsp dried basil    •  1/2 tsp garlic powder    Instructions Cook spinach according to package directions; drain well and chill. Combine all ingredients in bowl; mix well.Serve chilled.    Nutrition Facts  Calories 80    Total Fat 5 g   Sat. Fat 3 g  Cholesterol 10 mg   Sodium 135 mg    Carbs 4 g   Fiber 0 g    Protein 4 g

  but i realllllly i don't like maple syrup! or mayo, for that matter. I can't even begin to imagine what it tastes like togehter.
