What is everyone making with their apples?

We've done apple pancakes, apple crisp but my kids were a zealous bunch on Saturday so we left with 30 lbs of apples Chat Icon I still have 25 lbs.

Any ideas and recipes to share???

We are also going to try a butternut and apple bisque soup. It's savory sweet. Want the recipe?
My kids LOVE butternut squash soup as do we, with some cous cous it's yums, hearty, and low fat!

Eta: Recipe

Roasted Butternut Squash and Apple Bisque
2 medium Butternut squash - peeled, seeded, and cut into large chunks (~2 1/2 pounds)
3 medium Apples - peeled, cored, and cut into chunks
1 large Onion
2 teaspoons Minced Garlic
3 Tablespoons Extra Virgin Olive Oil
1/2 cup Apple Juice
2-3 cups Vegetable Stock ( 1/2 cup for roasting, and 1 1/2 - 2 1/2 cups for blending)
1 teaspoon Salt (or to taste)
1/2 teaspoon Ground Black Pepper (or to taste)
1/4 teaspoon Nutmeg
1/4 cup Honey (or to taste)
1/4 cup Heavy Cream (optional)
Preheat oven to 350 degrees.
In an oven safe roasting pan, toss the chunks of butternut squash, chunks of apples, diced onions, minced garlic, extra virgin olive oil, apple juice, and 1/2 cup of the vegetable stock. Roast, uncovered in the oven for 35-45 minutes, or until the butternut squash is fork tender. (ovens vary, so make sure the squash is tender when poked with a fork)
A BLENDER, AN IMMERSION BLENDER, or A HAND MASHER
Once the butternut squash mixture is done roasting, carefully pour the contents of the roasting pan into a large saucepan. You can mash the butternut squash and vegetables by hand or with the aid of an immersion blender. Add the remaining vegetable stock, a little at a time, until you reach the desired consistency for your bisque. **** If you want the bisque thinner, than add a little more stock (or water), if you want it thicker, then don't add all of the vegetable stock. ****
Season to taste with salt, pepper, and honey.
(Optional - add heavy cream and serve)
GARNISH - top with diced apples, or apple crisp
Yields 6-8 servings
