I don't know for sure, but I've always thought of it as like an assistant. Secretary, coffee fetcher, whatever needs to be done, you do it.
ETA: I think it's an antiquated and sexist term

yup, this is just about the definition. i was a "gal friday" during high school and college and it was a good starting point. nowadays, people advertise for "gal" or "guy" friday, its a stupid term IMO!
