I'm sure this has been asked plenty of times but I am becoming so frustrated with 21 month old DS's eating. I wish he would eat more of a variety. I work at a daycare and see these kids eating everything they are given but i also see the ones that barely touch anything on their plate. Here is a list of what DS does like:

All kinds of bread (whole wheat whenever possible)
Pasta... Specifically mac n cheese or Alfredo sauce
Rice (few bites sometimes... Getting better)
Breakfast foods (pancakes, waffles, French toast, muffins)
Cereal (oatmeal, Cheerios, kix, etc)
Earths best toddler cereal bars
Graham crackers
Regular crackers
Other snacks (cheddar bunnies, cheese puffs, veggie straws)
Pizza

Cheese either sliced or shredded
Yogurt (I buy plain and mix fruit in myself)
Milk
Fruit smoothies
Scrambled eggs
Peanut butter and all natural jelly

Pretty much all fruits (bananas, applesauce, raspberries, blueberries, strawberries, pear sauce etc)
Mashed sweet potatoes
Baked french fries

And that's pretty much it. No fish sticks, chicken nuggets, meatloaf, etc or veggies unless I hide them in something like pea purée in scrambled eggs.

I'm concerned he is eating too many carbs but gets a good amount of dairy and fruits. It's the meat and veggies we're having trouble with.

Can anyone suggest recipes to get proteins from meats and vitamins from veggies. I feel the only way is by pureeing but then that brings us back to "baby food".

Thanks in advance.
