what do with chicken cutlets...
so i gave myself a snow and want to cook a nice dinner for my hubby. i have chicken breasts so i was thinking of doing chicken cutlets and mashed potatoes... but thats one of my staples so i want to try something different.
any ideas? i have veggies but no cheese (so i cant do a stuffed chicken).

I'm making Pineapple Chicken tonight. I got the recipe from Yelley and it is amazing .
I use 5-6 chicken cutlets, 2 small cans of pineapple chunks with juice, 1/2 jar of duck sauce.
Fry the cutlets for a few minutes
Mix the pineapples and duck sauce together and then pour over the chicken and bake until chicken is done.
I use make basmati rice with it.
I make enough so it lasts for 2 nights.

After coating the chicken with egg wash and italian breadcrumbs I drizzle it with balsamic dressing. I bake it for 15 minutes and then turn it over and drizzle balsamic on the other side and cook for another 15. I usually top with fresh mozzeralla. Yummy!

I'm making chicken piccata, mixed veggies and either cous cous or PW crash hot potatoes later this week.

ill take the thin sliced cuttlets and roll ham and spinich and some type of cheese inside them... use a toothpick to hold them closed and pan fry them....
or
pan fry to golden brown... add a can of drained and rinsed white beans... can of diced tomatoes and a bag of baby spinach...
or if they are full breasts
you can butterfly them and stuff them with fresh pesto and a cheese...
