What Can I Make..
I was supposed to do Cod tonight.. but I just don't feel like drag assing to the fish market and Rob can't do it because after he finishes homework he's got to take the Noah to lacrosse..
So i have thin sliced chicken cutlets, 2 bags of spinach, itty bitty baby red potatoes, Fresh green beans and tomatoes on hand. I also have a ton of pantry items - rice, flour, etc.. and the usual suspects in the fridge..
So what should I whip up?

some kind of chicken roll-up.... do you have prosciutto? you can do some of that, spinach, and some kind of cheese...
with smashed red potatoes sauteed green beans with a mustard vinaigrette..

Grilled chicken with sauteed spinach and Giada's Warm Vegetable Salad
I used jarred peppers instead of fresh to save some time, dried oregano if I don't have fresh. DH loves this.

Forgot to mention to really save time, quarter the potatoes before boiling, then add the green beans to the pot towards the end to cook those too.
If I have frozen green beans, I defrost them while the potatoes are cooking, then drain the potatoes over the beans in a colander to "cook" them.

What I did (and it was GOOD!):
Chopped 1 onion, 4 cloves of garlic and 1 shallot and sauteed with about a Tablespoon of Olive Oil until just softened in a Dutch Oven. Removed from pan and then..
Dredged cutlets lightly in seasoned flour (salt, pepper, paprika) and put them in a non stick Dutch Oven for a few minutes each side until they were slightly golden.
Removed cutlets and deglazed pan with a splash of chicken broth and then added in: 1 chopped summer squash, and 3 chopped up tomatoes and the onion/garlic and a few good shakes of oregano. Sauteed for a few minutes and then put the chicken back in and added the green beans before I let it simmer covered for a few minutes until the squash was softened and the beans were cooked and not squishy. Threw in some fresh basil - gave it another minute and then served it with whole roasted new potatoes and a strawberry and spinach salad.
