*WEEKLY MENUS - 6/12
For once I have completed my menu very early!!!
SAT - Burgers, fries, salad
SUN - Party
MON - Meatball Hero's, side salad
TUES - Apple Chicken Sausage, rice pilaf, roasted broccoli
WED - Taco Salads
THUR - Filet Mignon, Baked Potatoes, veggie TBD!
FRI - Shrimp Scampi over rice, sauteed string beans w/cherry tomatoes

I actually hardly cooked last week so it's a pretty good copy of last week for me.
Sunday: MIL Monday: Chicken Souvlaki w/homemade tzatziki. Greek salad, lemon rice pilaf. Tuesday: Turkey Chili, Cornbread, Avocado Salad, yellow rice Wednesday: House burgers on grilled whole wheat buns, roasted corn on the cob, cucumber salad Thursday: Spaghetti a'la Jeannie, Fauxmade foccaccia, House salad. Friday: Garlic Shrimp, Sauteed Broccoli Rabe, Brown Rice pilaf Saturday: Herb Roasted Chicken with Sausage Sage stuffing, Grilled Veggie Salad, White Rice, Gravy

Sat--we had pizza, long day, LOL
Sun--Grilled Salmon burgers on multi-grain rolls with cold tortellini salad (lots of veggies)
Mon--Fiesta-beer marinated chicken thighs with sauteed spinach and baked beans
Tues--Curried veal shoulder chops with lemon zested broccoli and whole wheat cous-cous
Wed--DH is making burgers and corn on the cob, I am working late
Thurs-- Pappadelle (sp?) pasta with vodka sauce and garlic string beans
Fri-- Relay for life night, we'll have cheese & crackers and chicken and shrimp salads on crackers

Mon: chicken soup, toasted semolina bread with butter

Wed: I am going out with the girls!
Thurs: sausage and peppers over pasta

my menu is at home! so i'm trying to remember... i might not have all of the sides right, but i'll fix later when i can get DH on the phone
SAT - sweet & spicy chicken thighs, yellow rice, sliced cucumber
SUN - grilled veggie salad with agave citrus dressing; sundaes on sunday
MON - honey lemon chicken breast, couscous with shallot & chives,
TUES - cheeseburgers, mixed greens salad
WED - greek chicken pitas with cucumber-feta-dill salad
THURS - spicy bowties with broccoli & sausage
FRI - sushi night, but making creme brulee for dessert for BIL's birthday

Spaghetti a'la jeannie is sooo not exciting. It means I'm going to boil some pasta, throw in some garlic and oil, some chopped up broiled tomatoes, freshly grilled peppers. a good handful of freshly grated Reggiano and some fresh basil. It's good though. The Fauxcoccia is just pizza dough bought from the pizzeria and stretched out to fit my cookie sheet. I brush with olive oil, sprinkle on kosher salt and then we top it. The boys usually like sliced grape tomatoes - I like to throw on onions or sometimes a few pieces of thinly sliced red onion and some roasted garlic. We've even done raisins and rosemary. Whatever we are feeling that day!
As to stuffing.. I rarely stuff the bird. Making the stuffing in the pan prevents cross contamination. It's not as pretty as in the bird - and it might be a little more flavorful when stuffed - but you get more crunchy parts in the pan! Plus stuffing the bird takes longer in cook time. If you want to stuff, you basically make the stuffing and then shove it up the hole before trussing (or not trussing). Normally - I don't bother. I season the bird, stuff the cavity with citrus fruit and bouquet garni and then truss her and bake her. Is that what you were looking for? Or did you just want me to give you the stuffing recipe?

I just made this for the first time tonight and DH and I loved it! It's definitely for garlic lovers! The garlic pesto portion is for the most part from a recipe on Golden Earthworm's web site.
Shrimp Pasta with Garlic Scape Pesto
Ingredients: 9 oz of Bow Tie Pasta (3/4 of a 12 oz box) 1 1/2 pounds of raw shrimp, peeled and deveined 1 cup garlic scapes (about 8 or 9 scapes), top flowery and bulbous part removed, cut into 1/4-inch slices 1/3 cup walnuts 1/2 cup olive oil plus some extra oil 1/2 cup shredded parmesan cheese 1/2 tsp salt black pepper to taste
Directions: Boil water for pasta.
While waiting for water to boil, make garlic scape pesto: Place scapes and walnuts in food processor and combine until somewhat smooth. Drizzle in olive oil and process until integrated. With a rubber spatula, scoop pesto out of bowl and into a mixing bowl. Add parmesan to taste (I used 1/2 cup shredded, but you could also use grated instead). Add salt and pepper.
While boiling pasta in water, cook the shrimp: Add a turn of olive oil in a saute pan and set heat to medium. Add shrimp and 4 Tbsp of pesto (add more or less pesto depending on how much garlic flavor you want in your shrimp). Cook the shrimp through and turn off heat.
Strain the pasta and mix with shrimp. Add a couple more tablespoons of pesto to adjust the garlic flavor to your liking.
Notes: The pesto recipe makes about 6 oz. I have about a third of the pesto left over. You can save it for a week in an air-tight container in the fridge.
The pesto has a really strong garlic flavor, so be sure to taste your food as you cook to make sure you don't overdo the garlic!
