****Weekly Menu 7/31****
My week starts a tad earlier:
Thursday: Vegetable Strata, Potato Wedges and Roasted Long Green Peppers
Friday: Date Night at Mio Posto
Saturday: Grilled Rib Steaks, Provencal Veggies, KFC Cole Slaw (copy cat recipe), Caramelized Peaches with Vanilla Ice Cream
Sunday: Grilled Basil Chicken, Grannie's French Swiss Chard, and Mashed Potatoes
Monday: Mio Posto Leftovers
Tuesday: Chicken and Steak Leftovers
Wednesday: Masala Meatloaf, Mixed Veggies and Basmati Rice

Here's my plan for the week. Trying some new recipes. Fingers crossed they are good.
Sunday-Spaghetti w/meatballs and sausage, Italian bread
Monday-Chicken Marsala (Rocco), mashed red potatoes, asparagus
Tuesday-grilled steak, corn, roasted green beans, rissoto
Wednesday-Fresh mozzarella sandwich (skinnytaste)
Thursday-Chicken and Dumplings (Rocco)
Not sure for Friday and Saturday....we've got DH's work BBQ on Friday from 12-5 and DD's new school Grand Opening on Saturday so I likely won't cook those days.

Thanks! I've tweaked my recipe over time. Here is how I'm making it now:
Masala Meatloaf Recipe
Ingredients: 2 lbs lean ground beef 2 eggs, beaten 3/4 onion, chopped 10 sprigs cilantro (used 2 handfuls, chopped) 1 Tbsp ginger paste* 1 Tbsp garlic paste* 1 small green chili (seeded and chopped) 1 tsp red chili powder 1 tsp ground cumin 2 tsp ground coriander 1 tsp garam masala 1/3 cup plain bread crumbs salt to taste extra virgin olive oil
Topping: 1 cup canned tomato sauce 1 tsp ground cumin
Directions: 1. Preheat oven to 350. 2. In a saute pan on medium heat, soften the onions in a little bit of extra virgin olive oil (a few minutes). 3. Combine onion and all ingredients (except for topping) in a large mixing bowl. If you're not a fan of spicy food, omit the green chili. 4. Place meat mixture into meat loaf pan (I did two 1 lb mini meatloaf pans 8"x4" or you could do one big loaf pan). 5. In a small mixing bowl, combine tomato sauce and ground cumin. 6. Brush top of loaf with tomato topping. 7. Bake for 1 hr 15 minutes. Continue to check temp of meatloaf until fully cooked.
Notes- *To make the ginger and garlic paste, place an inch of ginger root and 4 cloves of garlic in a mini processor. Add some water (not a lot) and grind into a paste or liquid puree.

Monday: Salad, italian style stuffed peppers, corn on the cob
Tuesday: leftovers
Wednesday: turkey burgers, mashed cauliflower, and salad
Thursday: leftovers or if not enough, possibly go out with DH
Friday: Going away for the weekend, DH will probably go out
Saturday: same

Tue- Beef & Chicken tacos, whole wheat soft & hard shells, all the fixings, with yellow rice
Wed-Chicken risotta w/ asparaghous(sp)
Thur-Italian Pannin's w. macaroni salad
Fri-Out w. friends
Sat-BBQ-prob hamburgers, hotdogs,roasted corn, and mac & cheese

Sunday: grilled striped bass with pineapple salsa, tomato and avocado salad, corn on the cob topped with Parmesan, lime and chili powder
Monday: pulled Hawaiian style roast pork served with lettuce wraps, vegetable slaw and plum sauce
Tuesday: spanish tapas night - gambas al ajillo (shrimp in garlic sauce), garbanzos con espinacas (garbanzos sautéed with spinach

Monday: Picking up something at/after volleyball
Tuesday: Steak & flounder at my parents
Wednesday: Koenig's buffet
Thursday: Rigatoni cooked with olive oil and garlic, then baked with mozz. & ricotta
Friday: Probably takeout at my parents
Saturday: At a BBQ
Guess I didn't really need to post this week, since I'm not really making anything lol

Here we go:
Sunday: I went out to dinner before a concert/DH and DD ate at his aunt's house
Monday- Pasta with sauce and italian bread
Tuesday- grilled cheese and tomato soup
Wednesday- Thursday- Breakfast for dinner- pancakes from scratch, eggs, bacon, home fries
Thurs- Either eat at my mom's or chicken cutlets with broccoli and rice
Friday- burgers, salad, corn on the cob
Saturday- Unknown- I am going to a late afternoon bday party with DD. DH is on his own.

Sure!! The recipe is from Smitten Kitchen.
1/2 pound (230 grams) dried chickpeas, cooked until soft and tender* or two 15-ounce cans of chickpeas, drained and rinsed 6 tablespoon olive oil 1 pound (450 grams) spinach, washed A hefty 1-inch slice from a country loaf or about 2 slices from sandwich loaf bread (2.5 ounces or 75 grams), crusts removed and cut inset small cubes 1/2 cup (4 ounces) tomato sauce (I used canned stuff I keep around) 3 garlic cloves, thinly sliced 1/2 teaspoon ground cumin Pinch of red pepper flakes 1 1/2 tablespoons red wine vinegar 1/2 teaspoon smoked paprika** Salt and freshly ground black pepper Lemon juice, to taste
Place a large saucepan over medium heat and add half the olive oil. When it is hot, add the spinach with a pinch of salt (in batches, if necessary) and stir well. Remove when the leaves are just tender, drain in a colander and set aside.
Heat 2 more tablespoons olive oil in a frying pan over medium heat. Fry the bread for about 5 minutes or until golden brown all over, then the remaining tablespoon of oil and the garlic, cumin and pepper. Cook for 1 minute more or until the garlic is nutty brown.
Transfer to a food processor, blender or mortar and pestle along with the vinegar, and mash to a paste. Return the mixture to the pan and add the drained chickpeas and tomato sauce. Stir until the chickpeas have absorbed the flavors and are hot. Season with salt and pepper.
If the consistency is a little thick, add some water. Add the spinach and cook until it is hot. Check for seasoning and serve with paprika on top, or on fried bread toasts (as the Spanish do).

I'm a little late on this but my week starts on Tuesday after I pick up my veggies from the farm share.
Tues: Sweet Barbacoa Pork with Arroz Congri (Cuban Style rice & beans) Wed: Roasted Veggie Flatbread Pizza with Salad Thurs: Steak Fajitas with Homemade Salsa Fri: Lentils & Rice with Grilled Zucchini & Salad Sat: Pot Roast Sun: leftovers (lentils & rice) Mon: Pot Roast leftovers (if DH didn't take to work), otherwise vegan pizza takout Tues: leftover pizza or something easy because.... Wed: ARUBA!!!

Wednesday: Wonton Wednesday (first time trying this...should be interesting...making buffalo chicken and pizza wontons, maybe some fajita chicken wontons too)
Thursday: Thoup and Thandwich Thursday (Soup and Sandwich, yes, a stretch, but couldn't think of anything with "th") Sandwich will be BLT and soup will be either a veggie soup with beef or chicken soup.
Friday: Finger Food Friday (pigs in a blanket, mini pizzas, etc.)
