***Weekly Menu *** 6/19
Sat: BBQ Ribeye, Baked Sweet Potato, & Cucumber, Tomato, Fresh Mozzarella, & Fresh Basil Salad in a homemade balsamic vinaigrette. Fresh Peach Pie with Vanilla Ice Cream for dessert.
Sun: BBQ Country Ribs (marinated in a sweet bbq sauce with crushed pineapple), Corn Casserole, Homemade Cole Slaw, and Baked Beans
Mon: ST chicken-and-mushrooms-in-garlic-white over Linguini
Tues: Spinach Pie and Greek Salad
Wed: BBQ Beef &Turkey Burgers, Baked French Fries, Onion Rings, & Cucumber, Tomato, Fresh Mozzarella, & Fresh Basil Salad in a homemade balsamic vinaigrette (other half of cheese from Sat)
Thurs: Leftovers??
Fri: Pizza

Monday: Grilled Porterhouse, Roasted Sweet Potatoes, Tomato & Mint Salad
Tuesday: PW's Mexican Lasagna (leftover from yesterday)
Wednesday: Slow roasted pork roast, crispy oven roasted potatoes, Green beans with shallots & bacon
Thursday: Baked French Toast, Maple Bacon, Citrus Salad
Friday: Grilled Garlic Shrimp Skewers, lemony cous-cous, Grilled Scallions, House Salad.
Saturday: PIG ROAST!! Whoot!

Sunday - stuffed mushrooms, grilled clams, grilled lobster tails, salt potatoes, corn on the cob, grilled whole wheat garlic bread, smores brownies
Monday - Devon's taco casserole
Tuesday - DH is out, leftovers
Wednesday - Rojorono's seared cod, leftover salt potatoes, salad
Thursday - chicken cutlets, egg noodles w/butter and poppy seeds, green beans
Friday - out
Saturday - burgers, corn salad w/jalapenos, tomatoes and scallions, fries
baking this week - vanilla buttermilk pound cake, mini pancake muffins (weelicious recipe)

sunday - BBQ at my sisters
Monday - grilled chicken, baked sweet potatoes, grilled broccoli
Tuesday - grilled ribeye steak, pierogies & cucumber salad
wednesday - pasta with clam sauce
Thursday - we have a softball game/BBQ to go to
Friday & Saturday - Renting a house in A.C for the DMB carvan. I am making my famous burgers and marinated skirt steaks... and everything else to go along with it.

Sat: rehearsal dinner but
Father's Day Breakfast: apple strudel and chocolate puff pastry, bacon and raw goats montasio cheese omelet, and homefries (made in the bacon fat, of course)
Sun: Wedding
Mon: grilled chicken over green salad, garlic bread
Tues: sancocho over rice with zucchini and avocado salad
Wed: braised chicken thighs with carrots and spinach over buttered egg noodles
Thurs: most likely out. MIL is having guests.
Fri: out

sun- we were away
mon- leftover taco casserole (I have a fever)
tuesday- Lemon Pepper Chicken, asparagus & salad
wed.- the gas ran out on the grill!! Leftover lemon chicken sweet potato edamame
thursday - DH had last minute work dinner I had leftover veggie lasagna
Friday- re-do flank steak that has now been marinating for 3 days w/ cucumber salad
lame week
My week is all messed up edited to fix menu

Boil unpeeled new potatoes in salt water (I add about 1.5 cups of kosher salt to the water). Drain and then pour a little melted butter over them. They get a little bit of a salty crust on them and it's soooo good. The s'mores brownies are INSANE.
I made the taco casserole tonight...subbed black beans for the refried, used crushed baked Tostitoes and used a little bit of mexican blend cheese and then the rest pepper jack. Nicholas unfortunately didn't go for it (he's not a fan of that flavor), but HOLY COW Christian ate it like it was his job. He ate a quarter of the whole 8x8 dish. He was yelling because he was insisting on using a fork and couldn't get it on fast enough. LOL. Thanks for posting it!

Mmmmm about potatoes. I'm going to try with sweet potatoes since Matt can't have regular white.

Friday-Going to a wedding!
