Okay I'm back in the game!

Sat - top sirloin steaks with herb butter, 3 cheese orzo with spinach

Sun - whole roasted chicken, brown rice, burnt broccoli

Mon - baked tilapia oregano with couscous

Tues - tortilla crusted chicken chicken drumsticks with roasted potato wedges

Wed - one pot meal! chicken thighs with saffron rice

Thurs - bowtie pasta with sausage, broccoli, sundried tomatoes

Yay you are back!

Sunday - grilled burgers with pepper jack and fresh jalepenos, salad

Monday - fried turkey cutlets, buttered egg noodles with poppy seeds, steamed haricot verts

Tuesday - grilled lemon garlic shrimp skewers, salad with lemon vinagrette, couscous (thanks for the idea Hayley)

Wednesday - spinach lasagna

Thursday - leftovers

Friday - asian marinated flank steak, brown rice, sauteed broccoli with toasted sesame seeds

Saturday - out

I haven't posted in so long...

Sun- tequila spiced chicken with spanish rice, black beans and guacamole.
Mon- teriyaki-ginger chicken with brown vegetable fried rice.
Tues- ravioli and garlic bread
Wed- leftovers (if there are any left) or breakfast for dinner
Thurs- out for pizza, probably.
Fri- on vacation!
Sat- on vacation!

Saturday - My parents had a block party, so we were there.

Sunday - Cousin's 13th birthday party

Monday - Picking up something at/after volleyball

Tuesday - Chicken breast stuffed with spinach and ricotta

Wednesday: Pizza panini with homemade sauce

Thursday: Famous Daves

Friday: Pork roast in a chipotle rub and baked potatoes

Thursday: ST Coconut Chicken, Broccoli and Cous Cous

Friday: ST Turkey Meatloaves, Mixed Veggies and Potato Wedges

Saturday: Slow Cooker ST Barbacoa Beef, Cilantro Lime Rice, and Corn

Sunday: Coconut Chicken leftovers

Monday: Meatloaf leftovers

Tuesday: Beef Enchiladas and Black Beans

Wednesday: Shrimp Scampi with Penne and Mixed Green Salad

Sat: Our Super Duper Double Birthday Party for Jack & Ryan

Kept the apps really simple: Homemade hummus with pita chips, Veggies with onion dip, tostitos with salsa, and some terra chips
Catered in 4 different types of heroes, pesto tortellini salad, potato salad, green salad, Cesar salad, and we made baked ziti. I focused my kitchen attention on the dessert/candy table (I'll make a separate post about it)

Sun: BBQ Steak, Roasted Potato Wedges, and Salad

Mon: Leftover Sandwiches and Pesto Tortellini Salad

Tues: Grilled Chicken Cesar Salad

Wed: Baked Ziti with Meat Sauce and Crusty Bread

Thurs: Burgers, Dogs and Potato Salad

Fri: Pizza and the last of the leftovers

Not sure the last time I cooked. Back in the game. Way too much money eating out. Not sure it's less than groceries but it's less healthy for sure.

Sun-slow cooker ribs, mashed red potatoes, grilled corn
Mon-tortilla crusted tilapia, oven fries, roasted broccoli
Tues-?? Probably leftovers or something easy, no DH.
Wed- Pepper steak w/brown rice
Thurs- Skinny girl baked chicken parm, salads
Fri-shrimp fajitas!!

Also going to make two fritattas to have on hand for DH and I for breakfast

Sun: bbq chicken legs and breast, grilled corn on the cobb, insalata caprese with yummy heirloom tomatoes (plus hot dogs and buns)

Mon: braised chicken thighs with carrots, purple potatoes, and swiss chard over egg noodles.

Tues: homemade mac & cheese, sauteed zucchini

Wed: just told we are going out to eat for FIL's bday.

Thurs: sausage and peppers over rice, salad

Fri: OUT

In general, I've loved almost every recipe on Skinny Taste's site. From the ones I tried this week...

I loved the Coconut Chicken in her "Coconut Chicken Salad with Warm Honey Mustard Vinaigrette" recipe. It was a huge hit with my kids as well, and they've already asked for it again. I didn't make the salad part, just the chicken and the shredded coconut makes it taste so good! It's a nice change from the usual breaded baked cutlets I normally make in the oven.

I don't think I'll be making the Petite Turkey Meatloaves again. They're good considering it's only 5 WW points, but not as moist as a regular meatloaf (probably because it's made with 99% lean ground turkey). If you overcook it even slightly, it won't be moist in the middle. DH thought it was just okay and said he'd rather eat it as a turkey burger.

The Barbacoa Beef is delicious! I did it in the slow cooker instead of following her pressure cooker instructions, and the meat shredded really easily. (She has slow cooker instructions in one of her comments.) Her recipe calls for 2-4 chipotles, and two peppers created more than enough spice for my family. It makes a ton of meat, so it's good if you want to use the meat later in another dish, like enchiladas. I would also serve it the way she does with cilantro lime rice and corn salsa.

Tues.- Leftovers from Sunday

Wed- Beef stew with carrots, onions and peas over mashed potatoes

Thurs.- Chicken pot pie or chicken and noodles

Fri.- friend's house

Wed-marinated grilled chicken with baked potato and green beens.

friday-Dh's bday
