Vegetarians - I need your help! - Christmas Dinner
Hi Everyone,
I am hosting dinner this Christmas and my menu is:
Skirt Steak with Chimichurri Sauce Greek Lemon Potatoes Broccoli w/Garlic and Oil
My question is.. My SIL is a vegetarian, what should I make her for her main dish? I know she will enjoy the Brocolli and Potatoes but I dont want to just serve her that.

You could do a small baked ziti or veggie lasagna. Or cheese ravioli/tortellini, something like that, it's on the easier side of things since you're cooking up other stuff. Eggplant parm is great too.
I'm a longtime vegetarian and would be happy with any of the above

we make this quite often, so not really a holiday dish.. its a very popular lebanese dish..
stuffed eggplant
stuff it with eggplant flesh, lightly cooked rice, ground pinenuts, ground chickpeas, onions, garlic and top it with a chunky tomato sauce and bake.. top with parsley..
you can use whatever spices you want.
