Toddler Meal Ideas?
I want to add some new meals to DS's daily menu. I like to cook a big batch that he can eat over a few days. Please share your ideas or if there is a cookbook that you really liked!
TIA

Toddler Meal Ideas?
Sometimes I do simple things like make a bunch of sweet potatoes and then I can just reheat with a meat. I make a lot of grilled chicken to reheat as well. And I can make different things with it, like quesidillas, wraps, sandwiches, or just with the sweet potatoes...
Chicken noodle soup chicken with broccoli and pasta (only way she will eat broccoli) sweet potatoe fries pastina sometimes and Ill mix in some sweet potatoe so I know shes getting some nutrition from it I do pasta with plum tomatoes (it has a lighter sauce so its not too heavy) pizza is always a hit in our house LOL I do pasta with string beans and plum tomatoes (again the only way I can get her to eat string beans LOL)
I haven't used a cookbook I just get ideas from friends a lot.

Veggie fried rice, I'll add in two whole eggs to add protein. I'll also cook it in coconut oil which gives an awesome flavor and add some seasme seed oil for flavor too.
I do a lot of quinoa pasta but I like to make with ricotta cheese and chopped spinach.
Quinoa Mac and cheese with puréed broccoli.

Re: Toddler Meal Ideas?
I love to make things in big batches and freeze it and then take out what I need.
Breakfast: I will make a big batch of banana, blueberry whole wheat pancakes. I have a mickey waffle iron so she loves that
Spinach egg omelets
Oatmeal or Rice cereal with a fruit puree (apple sauce, mashed banana etc..)
Lunch/ Dinner: Lentil soup with pastina Split Pea Soup Chicken Soup with pastina Chicken Fingers with string beans, peas, carrots, corn Eggplant Veggie Balls (this is a skinnytaste recipe that she loves and is so healthy) Baked zucchini sticks Minestrone Soup with pastina Pasta Primavera (diced up veggies in a light garlic and oil sauce) Pizza Grilled Cheese Mac and Cheese I'll roast a chicken and then shred the whole thing and freeze it in little containers which is so helpful because you can add the chicken to anything.
