timing advice re: truffles
So I am going to be making a variety of chocolate truffles this year for christmas. They will be traveling in the car to ohio. I'd like to make some this coming weekend. Is it too soon? should I wait till the 18th/19th? I don't want them to go bad.

I'd wait til the 18th or 19th. I've kept 'em in the fridge for up to a week and they were still very fresh.
