Thought I would share what I made for dinner
I made this chicken dinner tonite and DD DEVOURED it. I mean, by the time I put the spoon in her mouth took it out and went to get more she mouth was waiting nice and open for me .
It's my grandmother's receipe and is really fool proof.
1 small onion, chopped 1 clove garlic, minced 1 package of chicken breast 1 cup of water 1.5 cups of tomatoe sauce 1.5 cups of frozen peas salt and pepper olive oil
Season the chicken with salt and pepper. Saute the garlic and onions until brown and then add the chicken and brown each side. Once the chicken is brown add the water and try and scrape the bottom of the pan to get all the bits up. Add the tomatoe sauce and frozen peas and salt and pepper the sauce. It will be water and that is ok. Cook on a med-low heat until the liquid is reduce by half and has thicken.
Now, I used chicken breast tonight because that is what I had at home. You can make it with thighs, legs, split chicken breast if you wish. My g-ma also adds red or orange peppers when she sautes the onions but DH doesn't like peppers.
The chicken just practically shreads and is prefect for DD to eat. I did use the hand chopper I have from Pampered chef and she ate half a piece and 1/4 cup of peas . Now if you forget about it or the sauce reduced to a point were it is a kinda to thick but not burnt just add more water and let it reduce. Enjoy!

This sounds great! Can you use homemade spaghetti sauce, or is it the kind of sauce you get in a can at the store? I am going to give it a try!

She actuallys uses tomatoe pasta and sits their and adds the water and reduces it. When I do that it come out right. You can use any sauce you want. I always use Francesco Rinaldi Original as my base sauce and add to it. Never just warm it up in the jar.

That sounds great! Thanks for sharing. I have such trouble getting DD to eat chicken unless it's drowned in sauce or gravy.

SOunds like my moms recipe for Chicken Pizzaiola It's very very yummy!
Except in my very italian family, i'd be disowned if i used jarred sauce
