I am making stuffed shells, meatballs, salad, etc. for Christmas but my in-laws are coming and are vegetarian. I'd like to have some eggplant for them, but am not a fan and have never made it. Where can I get some pre-made eggplant (rollatini or parmigiana) that I can just reheat the day of? Or should I buy breaded eggplant from an italian deli and just make it with that? Anywhere from Deer Park to Massapequa. Thanks!
