super easy delicious frittata
i made a broccoli and cheese frittata that was soo easy and delish!
i sauteed diced onion in 2 tsp. of olive oil, then i threw in a whole bag of the steam fresh broccoli florets (that i already heated in the microwave and then chopped up)
then i mixed in 2 servings of shredded weight watchers mexican cheese and 1.5 cups of liquid egg whites.
let it get somewhat solidified and then finish in the oven at 350 for about 12 min.
i topped it with slices of roasted red peppers. so good and low in calories, high in protein!
