Guacamole!
A trick I learned is to leave one or two of the pits in so it doesn't turn brown.

Re: Summer time appetizer???
I did marinated fresh mozzarella and tomato skewers on Saturday and they were a HUGE hit. I soaked cherry sized fresh mozzarella and tomatoes (they were either small cherry or really large grape tomatoes.. not sure which) in olive oil, fresh basil, garlic, oregano, salt, pepper, parsley and a splash of balsamic vinegar for about a day. I threaded them onto wooden skewers and sprinkled them with fresh chopped parsley and oregano - and a little torn basil. I made about 50 skewers and they were gone FAST.
