substituting aborio rice when making risotto
anyone do this? which rice did you use instead? i love risotto but would like to do it at a more cost effective price!

that's why risotto is a special treat for us!
of course there's nothing like arborio... because it's very starchy and keeps that little bit of bite even when it's cooked for so long in risotto.... but i'm thinking you can probably use a different short-grain rice and it might come out okay!

alton brown had a show on paella the other day... he said for risotto and paella dishes, you can use any short grain rice, altho it might come out just a little different that aborio.
There are lots of spanish short grain rices too... so look around in the rice ailse!
