Stuffing

This year my MIL put me in charge of making the stuffing. To which I told DH that we have to find a recipe...he said he did that already - it's called Stove Top. So he's going to make Stove Top but I want to make something a bit more creative. Can you share your favorite stuffing recipe with me please? TIA!!!!

I made this one last year and its now my favorite. I do it with out the walnuts and cramberries since DH can't each nuts and seeds! Its delicious!!!

I use white bread. I take the loaves and let them air dry. Then I grate the bread into crumbs. In a pan I saute onions and celery in butter or margarine until the vegetables are soft. Then I add the mixture to the bread crumbs and add chicken stock to moisten a little more. I season with poultry seasoning and a little salt and pepper. Then I pop it in the oven in a casserole dish until the top of it gets browned .. Its so good!! Simple but delicious.

I take the bags of pepperridge farm. I put butter in a pan. I add onions and celery. I let it get to its translucent. I then add broth to the pan to deglaze. Once it boils I turn it off. I add the onion mixture to the cubes of stuffing and then add in any fruit I am feeling (i.e. raisins, craisins, apples, apricots, etc).

I bake for 350 for about 30 minutes (sometimes more). If it seems to dry I will add an egg and some broth and let it cook for a little bit to soften it up.

I get day old rolls (about 10-12) from my deli. I picked them up last night, I'm gonna let them get even more stale until Wed night.

Soak them in water in my stockpot for an hour or so. (I think I may do it in equal parts chicken broth and water this year for flavor).

Then strain them in a colander, mushing them with my hands until I've squeezed out most of the water.

Same stock pot - I melt some butter on stove, add bread, 6 eggs, celery, onion, bell's poultry seasoning, salt and pepper and mix it all up til hot and tasty.

Stuff the bird and put the rest in a casserole dish to warm up on Thanksgiving Day.

I just do everything to taste.

Stuffing Muffins - makes 8- 10

1 package of hamburger potato rolls
1 small onion - chopped
1 stick of butter
2 eggs
splash of milk
salt & pepper

Preheat oven to 350. Grate the rolls on the large holls of a cheese grater. Sautee onion in butter untill soft. Beat eggs with a splash of milk. I add the salt & pepper to the eggs. Add eggs & onions to the bread. Stir. Using an ice cream scoop, scoop a large helping of the mixture into the muffin tin. My tin is non-stick so I didn't need to grease or use Pam. Cook for 30 - 35 minutes.

Make sure you watch them at the end. They go from done to burnt very quick.

I like my stuffing plain but I'm sure you can add you favorites to make it just like Mom's.
