Re: Stuffed peppers
I use the same meat mixture I use for my meatballs/meatloaf.
For some reason I use the can of hunts pasta sauce.
Stuff the raw peppers, bake until done I usually put a small slice of raw onion on the top and fill the cavity w/ sauce.
No rice
BTW - I found out the hard way that if a recipe calls for rice - its cooked rice!!!

Re: Stuffed peppers
I use cooked rice, Hot Italian sausage-out of casing, taco cheese, some sour cream, salsa, & hunts tomato paste
I love the way this comes out & so does everybody else. I made it up so I just eyeball how much of each thing!

Same! It's the only time I can abide the stuff!
I usually use ground turkey - but beef works also.
First boil regular rice per teh box instructions - but instead of water use beef broth. I also add a little beef base to this.
Put some sauce on the bottom of your baking dish. Clean peppers out and put them in baking dish (empty). Put baking dish with empty pepper shells/sauce in oven for a few minutes (just to soften them).
I saute some onion and garlic in a little olive oil. Add the meat and sautee until almost cooked through. Add some frozen peas. Toss in some worcestershire sauce and a little beef base (not too much since it is salty). Add fresh ground pepper and a palmful of Gruyere (or provolone, mozzarella, asiago - whatever floats you). Add in some sauce. Stir in cooked rice. Taste. If you need more salt use a little beef base. Scoop mix into shells, top with tomato sauce and more cheese (I use a mix of Gruyere and Reggiano on top). Put in the oven until cheese is melted and serve.
