Stuffed Artichoke Recipe
Does anyone have one? I really want to try and make them.

Here's how I make mine. I don't measure really. But I make enough stuffing by eye according to how many artichokes I'm making.
Cut the pointed part of the leaves and bottom stem. Rinse well, shaking out the excess water.
In a bowl, I combine:
-Lots of finely chopped garlic, bread crumbs, fresh chopped parsley, grated parmesan cheese, a good squeeze of a lemon, enough olive oil to make a paste, salt & pepper to taste.
Stuff artichokes with the mixture inside the leaves and on the top of the artichoke. Place artichokes standing up in a large pot with about 2-3" of salted water seasoned with the squeezed out lemon, bay life, a little olive oil. Cover pot and simmer for about 45 mins.

Sounds about right (although I dont use lemon).
With regard to other stuffed artichoke recipes, I would be very leary of ones that have no garlic
And to the above poster, yes...you boil them while they are stuffed!

I cook mine a bit differently...I steam them first until they are tender and then stuff them and cook them in the oven so the tops are a bit crisp and the breadcrumbs don't get too soggy...I make a stuffing of breadcrumbs, garlic, parmesesan cheese, seasonings and gorgonzola cheese...I sort of made it up from a bunch of different recipes.
