Striped Bass
Fresh caught last night. How would you make it?

YUM!
If the filets are nice and thick I'd season with a little salt and pepper, sear it in a pan with olive oil and garlic and then (without flipping or touching) finish it in the oven for a few minutes until cooked through. Maybe spritz a little lemon over it when cooked. Simple is best with fresh caught fish.
I also like fish packets - sliced zucchini, maybe some cherry tomatoes, a sprig of thyme or rosemary, some salt and pepper and some thinly sliced garlic. Wrap up with tin foil and throw on the bbq for about 7 minutes or so with the top closed.
I'd serve either preparation with some wild rice or a cous-cous pilaf and some quickly sauteed spinach with a little olive oil and lemon.
