Buttercup Squash with Apples

Ingredients:
1 small buttercup or other winter squash (1 pound)
1/2 cup chopped tart cooking apple
2 teaspoons packed brown sugar
2 teaspoons butter or margarine, softened
1/2 teaspoon lemon juice
1/8 teaspoon ground nutmeg

Directions:
1. Heat oven to 400°F. Cut squash in half; remove seeds and fibers. Place squash halves, cut side up, in ungreased baking dish.

2. Mix remaining ingredients in a bowl; spoon into squash halves.

3. Cover and bake 30 to 40 minutes or until squash is tender.

4. Scoop out apple mixture and squash. Mix in bowl- very tasty!

Personally, it took me an hour to get it fork tender in the oven and the last time I made it I had to zap it in the microwave for the last 10 minutes (not sure why- maybe my oven is having issues?). Also, I used 2 medium sized apples to fill the inside of the squash since 1/2 cup seemed too little for me. But the end result was delicious and now a family favorite!
