Sooo many things:
Off the top of my head (there are more):
- see LI wineries (have never been)
-go on a double decker bus tour in NYC
-eat at Serendepity's and Magnolia
-go to mass at St. Patrick's (I've been inside but not for a mass)
-go to South Street Seaport (I used to go with my friends as a teen all the time. Haven't been in 20 years)
As I think of more, I will add

See as many Broadway shows as possible.
Visit:
the Cloisters
the Guggenheim
Bannerman Island
Storm King Art Center
Kykuit
NY State Fair (have been but not in many years, want to go w DH & DD)

Arthur Avenue in the Bronx (might actually check that off this weekend)
Visit Governor's Island
Book of Mormon & Hamilton
Ausable Chasm
Lake Placid
Take the Roosevelt Island tram
